Spanish Omelette

We eat omelette in our breakfast more or less. Sometimes we need to have a  change in our regular taste. For, a different omelette recipe has been given below which is nutritious same time delicious..........yummy.

Ingredients-  1. oil- 2 tsp
                          2. potato- 1 ps (thinly sliced)
                          3. onion- 1 ps (fine diced)
                          4. tomato - 2 tbsp (diced)
                          5. capsicum- 1 tsp (diced)
                          6. egg- 2 ps (beaten)
                          7. black pepper- 1/4 tsp
                          8. salt - required

Method- Take a  non-sticky fry pan and make it a little hot. Give oil and lay the potato slices in it. Simmer the pan and cook the slices. Don't stir them. After sometimes turn over the other parts of potatoes and fry them again.Then add capsicum and onion on the potatoes. Sprinkle some salt and black pepper on them. Toss the pan if possible. Wait few minutes and then add tomatoes. Stir a little. Let them be fried. Now pour the  egg on the vegetables. Spread the egg all around the pan properly. Add a little oil under the egg to cook it properly. Simmer and cover the pan for a nice cooking. It will be looked like a colorful omelette and have it with bread or with anything as you like. You can add some chopped cheese to make it more tasty. In that case give a pinch of salt on the vegetables . Because there is salt in some cheese. Add cheese just after the beaten egg.
