Beijing Roast Duck

A one more Chinese Dish available in different restaurants in China is Beijing Roast Duck or Peking Duck.It is an authentic dish. It is delicious with scallion, cucumber and sweet bean sauce with pancakes rolled around the filling. Let's try-

Ingredients- 1.one whole duck- 4 pound
                     2. five spices powder- 1 tsp
                     3. nutmeg (ground)- 1/4 tsp
                     4. ginger (ground)- 1/2 tsp
                     5. cloves ( ground)- 1/4 tsp
                     6. white pepper (ground)- 1/4 tsp
                     7. sugar- 1 and 1/2 tsp
                     8. salt- 2 tsp
                     9. molasses- 1/2 cp
                  10. distilled white vinegar - 1 and 1/2 tsp
                  11. parsley- 1 tbsp

Method-  Wash the duck in a pot  with some lukewarm water. Rinse it's inside properly and pat dry. Prick all over the skin using a fork. Then take a bowl and mix five spices powder, ginger, cloves, white pepper, nutmeg, sugar and salt. Sprinkle the mixed masala into the cavity of the duck. Now mix molasses and vinegar
into the remaining mixed masala and rub evenly over the entire outside of the bird . Cover it with a lid and refrigerate for at least two hours or over night.

Preheat rotisserie oven to 375 degrees and bake the marinated bird for 45 minutes or until the skin is raddish brown. Then place the duck in a serving dish and garnish with some fresh parsley.
