Vegetable Cutlets

Winter has come again with a lot of vegetables. Different vegetables are of different colors. All the green, yellow, orange vegetables are rich for containing calcium, magnesium, potassium, iron, beta-carotene, vitamin B-complex,vitamin C, vitamin A and vitamin K. We can make delicious tiffin with them. Here we will make Vegetable Cutlets following the recipe.

Ingredients- 1. Mashed potato- 2 cp
                           2. Different vegetables- 2 cp (boiled)
                           3. parsley leaves- 2 tsp
                           4. green chili- 1 tbsp (chopped)
                           5. ginger- 1 tsp (chopped)
                           6. oregano- 1/2 tsp
                           7. thyme- 1/2 tsp
                           8. garlic- 1 tsp (finely chopped)
                           9. lemon juice- 2 tbsp
                         10. corn flour - 2 cp (slightly thick batter)
                         11. black pepper- 1/2 tsp
                         12. bread crumbs- 1 cp
                         13. oil - as required for shallow fry
                         14. salt- require

     Method-    Select other vegetables as carrots and green peas . Boil them.  Then mix all the  ingredients with the mashed potato in a bowl except corn flour, bread crumbs and oil. This will be a sticky mixture. Take some oil into your palm and make some cutlet . Give shape as  you like or use cutlet mold to make them. In that case,the molds should be oily a little. Then dip a cutlet into the batter and then roll on the bread crumbs. If you want you can mix some smashed corn flex with crumbs. Remember, When you make batter give some salt  in it. Fry the cutlets and serve with sauce or chutney.
